Eastwind Hotel in New York’s Catskills Adds More Rooms and a New Restaurant

  • Windham’s Eastwind Hotel & Bar has expanded with 12 new guest rooms, including suites with loft-style layouts and spacious family-friendly options.

Eastwind Hotel & Bar in Windham, New York, has added 12 new guest rooms and a casual restaurant. The expansion marks the relaunch of the Catskills-born flagship for Eastwind Hotels, known for its Scandinavian-inspired style and connection to the outdoors.

Mountain House, which is home to the new accommodations, unveils four room categories: Forest King Rooms come with a view of the pines; Mountain King Rooms face tree-framed slopes; and Mountain Studio Suites have loft-style layouts and wide views over Windham Mountain. The Pine Suite links a Forest King and a Mountain King to form a spacious accommodation that works well for families or groups. Guests also have access to a new wood-barrel sauna.

For the interiors, Eastwind Hotels co-founder and creative director Julija Stoliarova built on the company’s Nordic-inspired aesthetics, mixing clean-lined furnishings, vintage pieces, and Pendleton blankets. A palette of navy, terracotta, and soft neutrals warms the spaces, with large windows framing the surrounding peaks and evergreens.

On the dining side, the new casual eatery, Dandies, is set within a modern glass house and offers comfort favorites with seasonal ingredients and Catskills character.

“At Dandies, we set out to create a playful, more whimsical counterpart to our sibling restaurant Dandelion [at Eastwind Oliverea Valley], an experience that still embodies Eastwind Hotels’ spirit and our own culinary style, but in a way that feels more accessible, relaxed, and fun,” says Daniel Cipriani, the company’s co-founder and food and beverage director. “With Dandies, our goal was to take the bro out of beer and barbecue, giving beloved classics a touch of finesse without losing any of the heart.”

The menu features a bone-in short rib, cedar-grilled steelhead trout, and crispy trumpet mushrooms, as well as sandwiches such as the masa-dusted shrimp, barbecued chicken, and a grilled burger. Mornings bring savory Norwegian pancakes, breakfast sandwiches, and an Ace Coffee program.

To finish, Dandies puts a playful spin on dessert with its ‘A Little Bit Fancy’ housemade gelato and sorbets, scooped at the restaurant and sold to-go so guests can stash a pint in the freezer back home. “It’s another way we hope to bring a bit of Dandies’ playful spirit beyond the table,” Cipriani says. One highlight is a beer float made with vanilla bean gelato and Evil Twin Brewing’s Fructus Danica Sour. The frozen treats will be available year-round.

Behind the bar, New York’s Evil Twin Brewing has also created a custom pilsner called A Little Bit Fancy, joining the Eastwind oatmeal stout, along with a menu of more beers and cocktails. In the dining room, natural wood, vintage brick floors, a custom bar, and a circular freestanding Malm Fireplace keep things cozy. Outside, guests will find picnic tables, forest seating, and a seasonal biergarten.

“Dandies is meant to feel warm, communal, and just a little unexpected,” Cipriani adds, “a place where great food, great drinks, and great company come together without any of the pretense.”
